The Vision
Brodeto is the creation of Chef Scott Crawford, a five-time James Beard Award semifinalist whose career spans some of the most respected kitchens in the American South. After years of building Crawford Hospitality into one of Raleigh's defining restaurant groups, Chef Crawford turned his attention to the Adriatic — the coastal cuisine stretching from Italy's eastern shore through Croatia, Montenegro, and beyond.
The result is Brodeto, named for the traditional Adriatic fisherman's stew that varies from village to village along the Dalmatian coast. It is a restaurant built on the premise that great seafood needs little more than fire, salt, and the confidence to leave it alone. Every dish on the menu reflects that restraint — whole fish roasted over wood, handmade pastas dressed simply, and vegetables treated with the same care as the protein.
In 2025, the MICHELIN Guide recognized Brodeto with a recommendation. Chef Crawford’s approach is not about spectacle. It is about sourcing the finest ingredients the Carolina coast and regional farms can offer, then cooking them with techniques rooted in centuries of Adriatic tradition.
The Brodeto Experience
Wood-Fired Seafood
Our wood-burning hearth is the soul of the kitchen. Whole branzino, snapper, and seasonal catches are roasted at high heat, yielding crisp skin and tender, smoky flesh. The fire does the work — we simply guide it.
Handmade Pasta
Every pasta served at Brodeto is made in-house daily. From squid ink linguine with Carolina shrimp to hand-rolled pici with slow-cooked pork ragu, our pasta program bridges the Italian and Croatian traditions that define Adriatic cooking.
Adriatic Wines
Our wine list is an education in the Adriatic's underappreciated varietals. Croatian Plavac Mali, Slovenian Rebula, Italian Verdicchio — each selected to complement the coastal flavors on the plate. The bar also features craft cocktails built on Mediterranean botanicals and Adriatic spirits.
From the Kitchen
The menu at Brodeto changes with the seasons and the catch. In spring, you might find soft-shell crab with Meyer lemon and capers. Summer brings heirloom tomatoes paired with burrata from a local creamery and torn basil. Fall means wild mushroom risotto finished with aged Parmigiano, and winter calls for hearty seafood stews that honor the brodeto tradition itself — slow-simmered with wine, olive oil, and whatever the fisherman brought in that morning.
Beyond the main courses, the raw bar showcases the best of the Carolina coast — oysters from Stump Sound, tuna crudo with Calabrian chili, and shrimp ceviche with citrus and fennel. The charcuterie program features house-cured salumi alongside imported Croatian and Italian specialties, served with grilled bread from our wood-fired oven.
